Today’s consumers demand healthier, more natural products. As an expert on Latin America’s market, Claudio Ferri of D.D. Williamson points out that manufacturers in Mexico and other countries have reacted to these changing consumer preferences by creating products that meet the consumer’s needs — while also having more visual appeal. The idea that we “eat with our eyes” is nothing new. In the following video (used with permission from ABC News), food chemist and industry expert Kantha Shelke discusses how food colour affects taste:
“You are what you eat,” the video begins, “but new science now says it could be you eat what you see – that changing a food’s colour can actually change the way it tastes.”
Shelke agrees, telling the ABC News reporter: “We eat with our eyes before we ever smell or taste.”
Therefore, it comes as no surprise that as consumers crave healthier and more natural products, naturally coloured foods and drinks are becoming increasingly important. Many consumers around the world now prefer natural colourings instead of synthetic ones.
“Naturally coloured products,” Ferri says, “give the consumer a greater sense of pleasure and are also more pure [or non-synthetic].”
