Excerpts from November/December 2010 Organic Processing magazine pp. 14, 19,45
As the organic industry grows, so do the ingredient options for organic product developers. Today’s ever-expanding organic formulating toolbox is overflowing with everything from functional foods that fight off disease to innovations that improve the over-all flavor or texture of products, as well as many new gluten-free and fair trade options.
In every issue of “Organic Processing Magazine” we highlight the latest and greatest new products in our “Innovations” section. Then once a year we round up all the new products and highlight the ones that stand out. Here is one of our picks for 2010.
Colors
Giving formulators more colorful options, DD Williamson has developed an acid-proof, organic caramel color for the North American marketplace. The new product provides stability below pH 2.5 and in alcohol up to 65 percent alcohol by volume. Caramel Color 820 is minimally processed and formulators using the new coloring can state “organic caramel color” on ingredient declarations.
