… “Because caramel color also serves as an emulsifier to flavor oils in soft drink concentrates, colas not containing caramel taste quite different from a consumer acceptance perspective,” says Campbell Barnum at D.D. Williamson. “Disappointing sales of certain store-brand cola (formulated without caramel color) support this fact. In light cola, for example, caramel color is the second ingredient (after water) by weight, so it impacts the flavor profile. DDW 520 delivers improved flavor stability compared to non-caramel options for soft drinks,” he adds.
